Pat pork chops dry with paper towels and season generously with salt and pepper on both sides.
Slice onions into 0.25-inch-thick half-moons. Core apples and cut into 0.25-inch-thick slices.
Heat olive oil in a large skillet over medium-high heat. When shimmering, add pork chops and sear for 4 minutes on each side, until golden and cooked through (internal temp 145°F). Transfer to a plate.
In the same skillet, add butter and onions. Cook over medium heat for 8 minutes, stirring occasionally, until soft and starting to caramelize.
Add apple slices and thyme sprigs. Stir and cook for 3 minutes.
Pour in cider vinegar and chicken stock. Scrape up any browned bits from the pan bottom. Simmer for 2 minutes.
Return pork chops to the skillet, nestling them into the apples and onions. Cook for 2 minutes more to warm through.
Taste the pan sauce and adjust salt and pepper. Remove thyme sprigs before serving.
