Place chicken breasts between plastic wrap and pound with a meat mallet until about 1/4 inch thick.
Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko mixed with 1/4 cup parmesan, salt, and pepper.
Coat each chicken breast lightly in flour, shaking off excess, then dip in egg, then press firmly into breadcrumb mixture until well coated on both sides.
Heat olive oil in a large skillet over medium-high heat. When shimmering, add chicken in batches and cook until golden brown, about 3 to 4 minutes per side. Transfer to a plate.
In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Pour in canned crushed tomatoes, 1/4 cup remaining parmesan, and half the fresh basil. Simmer for 5 minutes.
Preheat your broiler to high.
Arrange cooked chicken in a baking dish and spoon sauce over each piece. Top with mozzarella cheese.
Place under the broiler for 2 to 3 minutes until cheese is melted and bubbly. Watch carefully to avoid browning too much.
Garnish with remaining fresh basil and serve immediately.
