The night before, cover the dried black beans with cold water by a couple of inches and let them soak on the counter for 8 to 12 hours. Drain and rinse them well.
Set a large skillet over medium heat and cook the chopped bacon until it has rendered most of its fat and started to crisp, about 8 minutes. Add the onion and cook in the bacon fat until soft and golden, about 6 minutes.
Stir in the garlic, tomato paste, cumin and smoked paprika and cook for 1 minute, until the paste darkens a shade and smells toasty.
Scrape everything from the skillet into the slow cooker. Add the drained beans, ham hock, bay leaves and chicken broth, and stir. Season with a generous amount of black pepper but no salt yet, because the ham hock is salty.
Cover and cook on low for 7 hours, until the beans are completely tender.
Stir in the sliced sausage, cover, and cook on low for 1 more hour.
Lift out the ham hock and set it on a cutting board. Fish out and discard both bay leaves. Pull the meat off the hock in bite-size pieces, discarding the bone, skin and any gristle, then return the meat to the slow cooker.
Mash a big spoonful of beans against the side of the pot and stir them back in to thicken the broth. Taste and add salt as needed.
About 30 minutes before serving, cook the white rice in a saucepan following the package directions.
Heat the olive oil in a clean skillet over medium-high heat. Add the collard ribbons with a pinch of salt and cook, tossing, until bright green and just tender, about 5 minutes.
Spoon the rice into bowls and ladle the feijoada over it. Serve with the collards and orange slices alongside, eating a bite of orange between spoonfuls to cut the richness.
