Bring a large pot of salted water to a boil and cook the egg noodles according to package directions. Drain and set aside.
While water heats, pat the beef strips dry with a paper towel. Season with salt and pepper.
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Working in batches, sear the beef 1 to 2 minutes per side until browned. Transfer to a plate.
Add remaining 1 tbsp olive oil and butter to the skillet. Add the sliced onion and cook 3 to 4 minutes until softened. Add the mushrooms and cook another 3 to 4 minutes until golden.
Stir in the garlic and cook 30 seconds until fragrant. Add the tomato paste and paprika, stirring to coat the vegetables, about 1 minute.
Pour in the beef broth, scraping up any browned bits. Bring to a gentle simmer and cook 2 minutes.
Reduce heat to low. Stir in the sour cream, dijon mustard, and the cooked beef (with any juices). Fold until the sauce is smooth and creamy. Do not boil.
Taste and adjust salt and pepper. Fold in the fresh dill.
Divide the warm noodles among bowls and ladle the stroganoff over top. Serve immediately.
