Steps
Heat a large skillet over medium-high heat. Add ground beef and diced onion, breaking the beef into small pieces as it browns, about 5 minutes. Drain excess fat if needed.
Add minced garlic and cook for 30 seconds until fragrant.
Stir in chili powder, cumin, oregano, paprika, salt, and pepper. Cook for 1 minute to bloom the spices.
While beef cooks, bring water to a boil in a saucepan. Add rice, stir once, then reduce heat to low. Cover and simmer for 15 minutes until tender.
Drain and rinse the black beans, then warm them in a small pot or microwave.
Heat corn in the microwave or in a skillet until warm.
Zest one lime and juice both limes. When rice is cooked, fluff it with a fork and stir in lime juice, lime zest, and 1/4 cup cilantro.
Assemble bowls: divide lime cilantro rice among four bowls. Top with seasoned beef, black beans, corn, and lettuce.
Finish each bowl with shredded cheese and a dollop of sour cream. Serve with lime wedges and the remaining 1/4 cup cilantro.
